Turkey, Salsa, and Cream Cheese Breakfast Skillet

What’s better than a one-pot dish? A healthy one-pot dish. This ground turkey scramble was created because it was all I had left in the house before heading out for the holidays. It is incredibly easy and coincidentally very healthy.

Ingredients

1 tbsp. olive oil

1 lb. ground turkey

1 onion, chopped

1 bag baby spinach

½ cup salsa (whatever brand and style you like)

15 cherry tomatoes, cut into halves

3 oz cream cheese

Salt and pepper

4 eggs

 

Directions

Preheat the oven to 350. Using an oven proof skillet, add the olive oil and turn to medium high heat. Brown the turkey and onions until the turkey is cooked through. Add the spinach and continue stirring until the spinach wilts. Add the salsa, cherry tomatoes, and cream cheese. The cream cheese will melt in as you stir, giving the dish a nice richness. Season with salt and pepper. Make four indentations with the back of a spoon for the eggs to go in. Crack an egg into each of the indentations. Season eggs with salt and pepper, and put skillet immediately into the oven. Cook in the oven for 7-15 minutes, watching for the desired consistency of the egg. I like mine to be medium, where the whites are cooked but the yolks are runny.

Plate the dishes so that each portion has an egg on top.
